Saucy Gochujang Noodles with Chicken

  1. Make the sauce: Whisk all sauce ingredients (except the extra broth) in a bowl or shake together in a jar until smooth and thick.
  2. Cook the chicken: In a large skillet, cook ground chicken over medium-high heat. Season generously with salt and pepper.
  3. Boil the noodles: Cook noodles for a few minutes to soften, then drain and set aside.
  4. Combine everything: Add spinach, noodles, and the sauce to the pan with the chicken. Toss over medium-high heat until the spinach is wilted. Gradually add broth or water (about 1½ cups) until you reach your desired saucy consistency.
  5. Serve: Top with herbs, scallions, chili oil, sesame seeds, or any toppings you love. Serve hot and enjoy the ultimate comfort meal!

Notes

Spice level: The heat depends on the brand of gochujang you use. Bibigo and P.F. Chang’s brands are milder and family-friendly. For more spice, add chili oil or extra gochujang when serving.

Protein swap: Ground pork or turkey works perfectly in place of chicken.
