Ingredients:
- 8 ounces dried noodles (udon, ramen, soba, lo mein, or spaghetti)
- 1/4 cup soy sauce (or tamari, preferably low-sodium)
- 2 tablespoons rice vinegar
- 2 tablespoons toasted sesame oil (divided)
- 1 tablespoon honey
- 2 teaspoons cornstarch
- 1 teaspoon Asian chili-garlic sauce (optional)
- 2 cloves garlic (minced)
- 1 pound lean ground beef
- 1/2 teaspoon kosher salt (plus more for noodles)
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon sesame seeds (plus more for garnish)
- 8 ounces baby spinach (about 8 packed cups)
- Thinly sliced scallions for garnish (optional)
Instructions:
- Prepare the noodles: Bring a large pot of salted water to a boil. Add the noodles and cook for 1 minute less than package instructions. Drain and rinse well under cool water.
- Make the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, cornstarch, chili-garlic sauce (if using), and minced garlic.
- Cook the beef: Heat the remaining sesame oil in a large skillet over medium-high heat. Add the ground beef, season with salt and pepper, and cook until browned and fully cooked, about 5-7 minutes. Stir in the sesame seeds in the final minute.
- Combine: Reduce heat to medium. Stir in the spinach in a few handfuls at a time. Once the spinach is wilted, add the cooked noodles and sauce to the skillet. Toss everything together until well mixed and heated through.
- Garnish and Serve: Garnish with extra sesame seeds and thinly sliced scallions if desired. Serve immediately and enjoy!
